I've had several requests for my homemade bread recipe without soaking instructions for those days when life gets crazy and you still need bread but only have a few hours. I don't do this very often because we've come to love the texture of soaked bread, but in a pinch it works.

Whole Wheat Bread, the Awesome Kind
2 1/2 c. hot water
1 Tbl salt
honey
2 Tbl coconut oil
4-6 c. whole wheat flour
1 Tbl. yeast
If you are making this with a Bosch mixer you can double this recipe easily and I've tripled it before. If you are using a kitchen aid, or other stand mixer I'd probably stick to a single batch.
Measure hot water into mixing bowl. Add salt, honey, oil, half the flour and then the yeast on top of the flour. Mix til combined. Slowly add more flour til mixture cleans the sides of the bowl. The amount may vary depending on when the flour was ground, the moisture content of the flour, the humidity on baking day, how accurate your water measuring was etc. etc. etc. So when the bowl is lovely and clean you have enough flour in your bread.
Place in greased bowl, turning once to coat dough, and let rise til double. Shape and place into greased loaf pans. Let rise till almost double. Bake in 350' oven for 37 min. Remove from oven and let sit for 5-10 minute. Remove from pan and cool an additional 20-30 minutes on wire rack before cutting. Even though it's tempting to cut it early, resist. The bread continues to steam and finish after it's removed from the oven. It will still be hot after the wait and you won't lose the moisture from your bread.
This recipe can be used to make cinnamon rolls (yes we eat whole wheat cinnamon rolls), scones (use a good high temp oil like coconut oil or a good quality, non-hydrogenated lard to fry in), bread sticks, dinner rolls and even a completely divine Italian artisan bread, add 1 1/2 tsp each of garlic powder, onion powder, basil and oregano with the flour. Form rounded artisan loaf on baking sheet and score prior to baking. (I'll try to take photos next time) We also use this recipe for making the bread for our homemade paninis.
