Soaked Whole Wheat Bread Updated

I keep learning so my recipes keep being revised and so I'm here, yet again, to make changes to this post.   
  Here are the revisions based on my science experiment. (if you want to add seeds, they are listed at the bottom of this page)
2 1/2 c. hot water
2 T. lemon juice
5-6 cups flour

After 12-24 hours add
1/8 c. honey
1 T. salt
2 T. coconut oi (or you can use 3/8 c. of olive oil)
1 egg

1 T. yeast mixed with enough water to moisten

To mixer add water,  lemon juice and 4 cups of flour.  Mix to combine. With mixer running add remaining flour slowly til the dough cleans the bottom of the bowl.  Dough will be fairly sticky when it is done.  I leave the dough in the mixer, put the lid on and set it aside for 12-24 hours. 12 works well, but you can leave it as long as 24.  The dough will darken on top while sitting, but once you mix it again it will be fine so don't panic when your dough looks grey when you come back to it.

When ready to make bread, add salt,honey, egg, oil and moistened yeast to mixer.  This can get messy so add it in the middle of the dough and run mixer gently to combine.  If the dough is too sticky you might have to add a bit more flour at this point, depending upon how much water was in your yeast, how humid your kitchen was and for other unknown reasons.  Don't fret, it will still be 90% plus soaked bread.  After the dough is ready I let the mixer knead the bread for 10 minutes.  I loosen the mixer lid and let dough rise in mixer.  There are many who prefer to move the dough to a large, greased bowl to rise.  I have enough dishes already that I'm willing to deal with mixer risen bread.  Let rise til double which usually takes about 2 to 2 1/2 hours.  You can always bake cookies to warm the kitchen and hurry things up.
After dough has doubled, punch down and shape into 2 loaves.  Place in greased pan and let rise another 45 min to 1 hour.  Bake at 350 degrees for 37 min.  Cool in pan for 5-10 minutes then move to wire rack and cool another 20 minutes before cutting.  It's temping but the bread is using the internal steam to complete cooking so resist!!!
If making rolls form dough into golf ball size balls and place on greased or parchment lined baking sheet.  Let rise to nearly double and bake at 350 for 22 min, or until they start to color on top.

If adding seeds, add them to soak with the flour, lemon juice and water.
I add the following seeds:
1 T. chia seeds
1 T. poppy seeds
1 T. sesame seeds
1 T. ground flax seeds

  4. What are you adding seeds for? What does it do for the bread? Probably I should know this but I am asking anyway.

  5. Lots of nutrients, protein and good fats in seeds. Soaking seeds with the flour makes those nutrients available. D and B love the texture of bread with seeds as well.
