One of my sweet friends brought this soup to us many years ago when our youngest was born (he's 11) and I fell in love with it. I've tried many recipes through the years and this Tortilla Soup recipe is my favorite.
Tortilla Soup
4 cloves garlic - finely minced
1 onion
1 T olive oil
2 tsp chili powder
1 tsp cumin
3 cups chicken broth
1 28 oz can of diced tomatoes
1 chicken breast cooked and diced
1 can corn
1 can hominy
1 can black beans
1/3 c. green salsa
6 corn tortillas chopped into 1/2 inch by 1/2 inch pieces
1/2 bunch of cilantro (or less)
2 avocado (as garnish)
crunched up tortilla chips
In large pan cook garlic and onion in olive oil. When tender add cumin and chili powder. Add chicken broth and tomatoes and bring to a boil. Add cut up tortillas to boiling mixture, these will slightly dissolve and thicken the soup. Add chicken, corn, hominy, and black beans and heat through.
Before serving add cilantro. Garnish with avocado and crunched up tortilla chips.
