Crunchy Nut Treats

The toughest part of this recipe might be waiting for them to dehydrate. 

Crunchy Nut Treats

4 cups roughly chopped raw almonds (I like half almonds and half raw cashews)
1 c. shredded coconut

2 T. ground chia seeds
1 tsp cinnamon

1 c. applesauce
1/4 c. honey
1 tsp vanilla

Combine dry ingredients, add all wet ingredients and mix well.
Smash onto dehydrator trays (the plastic inserts that cover the trays).  I think you could use your oven on the lowest setting, it would take much less time to do that.  When it's dry and almost crunchy the snack is done.  It will crisp up the rest of the way upon cooling.  I dehydrate mine about 6-8 hours.  If you bake instead just check every hour or two.  I take it off the trays when still warm and break into pieces to store.  Our kids called this a cross between the cashew treats from Costco and granola and requested lots for summer hikes and activities.
