Homemade Hot Cocoa Mixes

My issue with commercial cocoa mixes (chemicals aside) is that they all contain hydrogenated oil. Yep, shortening in your cocoa, ick! I've read many labels and haven't found one so I quit buying it. I've made homemade but it's gotten luke warm reviews (pun intended *S*) We like the flavor of this one and the blender trick might just make us all happy.  Still haven't figured out how to make it without sugar though so its not a frequent treat, but there are snowman days and sledding days when it just feels good to have a cup of cocoa. 


Milk Chocolate Cocoa Mix

2 1/2 cups powdered milk
1  c. natural sugar (zulka, demerrera, sucanant)
1 cup baking cocoa
1 teaspoon salt
2 teaspoons cornstarch
1 pinch cayenne pepper
Hot water

Mix 1/4 to 1/3 c. of mix in with very hot water and stir.  

Our children haven't liked the texture of homemade cocoa mixes and the fact that they don't dissolve as well. This time I put the ingredients into the blender in the order they are listed and then let it blend until it was a fine powder of uniform color. It mixes like a dream, no lumps and tastes yum. I usually make cocoa by mixing a little water, cocoa and sugar in a pan then adding the milk and warming it. It's good but it takes most of my cooking time to make it, so instead of a quick easy breakfast, cocoa and toast takes as long as eggs and toast. This will let me throw in some toast, heat water and they can mix their own. Happy Mom!

Dark Chocolate Mint Cocoa - the new favorite

Make cocoa as above except substitute dark cocoa for the regular baking cocoa and increase sugar by 1/4 c.   After it blends awhile I add 10 drops of organic peppermint oil then blend again.  We store these in glass jars with lids. 

Coconut Almond

Make cocoa as written substituting dark cocoa for regular baking cocoa and increase sugar by 1/4 c.  Add 1/2 tsp almond extract and blend.  After making hot cocoa add 1 tsp coconut oil and stir.  YUM!
