Coconut Fudge

Love this one from The Nourishing Gourmet  I've shared this with lots of people and usually they put a piece in their mouth and then make a sort of 'oh my goodness that's good' kind of sound before they say, 'oh my goodness that's good.'  See what you think!!  

  

Coconut Fudge

1/2 cup coconut oil
1/2 cup cocoa powder
1/4 c. honey
dash of sea salt
1/2 teaspoon vanilla

Soften coconut oil slightly (double boiler or microwave). Mix all ingredients. Pour into loaf pan lined with plastic wrap. Place in freezer for 20-30 minutes. Using plastic wrap, remove fudge from loaf pan and cut into 1" x 1" pieces. Store in refrigerator.
