I like to serve this in bread bowls, but bread or bowl, no one is the wiser to this cheesy yummy goodness.
3-5 cloves of garlic peeled
1 small onion diced
1 T. olive oil
1 head cauliflower washed and cut into pieces
4 c. chicken broth
1/2 c. paremsian cheese (optional, leave out to make this dairy free)
2 c. misc. vegetables washed, sliced to bite size and steamed or boiled
I like carrots, peas, potatoes, broccali even more cauliflower
In a large pot saute garlic and onion in olive oil until translucent. Add chicken broth and cauliflower. Bring to low boil and cook until cauliflower is soft. For best texture I like to put this in my blendtec on the soup setting (or if you dont' have a blendtec put it on the highest blender setting you've got). Return to pot and stir in paremsian cheese
Add hot, cooked veggies and gently stir.
