This is a favorite with our children. They are whole grain, have omega 3's, antioxidants from the cocoa and low fat, and they taste like dessert! We top them with berries or just eat them plain. Our kids favorite is raspberries.
Raspberry topping:
1 cup of raspberries
1-2 tsp sugar
2 Tbl ground chia seeds (this thickens it)
Mix together and set aside while you make pancakes.
Chocolate Chocolate Chip Pancakes
1 c. whole wheat flour
1/4 c. cocoa powder
1/8 c. sugar
2 T. ground flax seed
1 1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 c. skim milk
1 tsp vanilla
1/2 c. semi sweet chocolate chips (the darker the better)
Mix dry ingredients in mixing bowl. Add eggs, milk and vanilla and stir to combine. Do not over mix as they will be chewy. If time allows let batter sit for 10 minutes (I rarely have 'time allowing' for this one)
Coat griddle with oil spray and spoon batter on. Dot with chocolate chips. When pancakes start to bubble flip them over.
Our youngest son loves to 'triple stack' his pancakes. 3 pancakes with berries in between each layer, and he gets to call it breakfast!
