Peanut Butter Popcorn

I wasn't a fan of this popcorn, made it for home teaching families and then discarded the idea of sharing it. However it disappeared quickly. D. liked it and S. and her friends couldn't get it in fast enough. So maybe it's a keeper recipe.


1/3 cup demerara sugar 3 Tbsp water (you could use 2Tbl honey plus 3Tbl water)
2/3 cup peanut butter (I want to try almond butter too)
1 tsp vanilla
1/4 tsp salt
1/2 cup chopped nuts (I used almonds)
12 cups popped popcorn

Heat sugar and water over medium heat until it begins to boil. Turn off and add nut butter, vanilla and salt. Stir continuously until well blended, return to heat if necessary. Remove from heat, add nuts and stir.
Pour over popcorn and stir until coated.
