Soaking Nuts

Raw almonds are definitely our nut of choice (although truly raw almonds is another story) but what passes for raw almonds.  Soaking nuts begins the sprouting process, releasing nutrients and enzymes.  Plus they just taste yum!
I use about 1 1/2 lb almonds (half a costco bag) in a large bowl (not metal)
Cover with water and then sprinkle with 1-2 Tbl sea salt.
Let soak for 24 hours
Remove almonds from water and place on dehydrator trays.  Dehydrate at 115 for about 24 hours, or until nuts are completely crunchy, no soft centers.
These are really crisp and a tiny bit salty.  I love soaked almonds, my husband likes them raw so we have a jar of each at our house.
