Pumpkin Oatmeal Cookies

This is the recipe from the Women's Conference.


Pumpkin Oatmeal Cookies

1 c. cut up banana in large mixing bowl.  Measure banana then mash with fork
Add:
1 c. pumpkin
2 eggs
1 tsp vanilla
1/4 c. honey
2 Tbl olive oil

Stir to combine.
Add all dry ingredients:
1 1/2 c. whole wheat flour
2 c. rolled oats (old fashioned kind, not the instant kind)
1 tsp baking soda
1/2 c. sugar
4 T. wheat germ
2 T. ground flax seed
1 tsp. cinnamon

1/2 tsp nutmeg
1 c.semi-sweet chocolate chips (I love the 63% cacao kind from Guittard)


Mix to combine.  Drop by teaspoonfuls onto greased or parchment covered baking sheet.  Bake at 350 for 15-17 minutes. Remove to baking rack to cool as soon as these come out of the oven.

  1. Could dates be used instead of the sugar?

  2. I'm sure you could Janet. I've not done enough substituting with dates to know the numbers you would use, you're probably far better than I am at that. I have only used dates in recipes that call for them. Learning the sugar to date ratio is definitely a project I"ll get to one of these days.
