Chewy Ginger Cookies

I'm not a fan of ginger snaps, or any crunchy cookie really, but ooo I love a chewy cookies, especially ginger.  Our pickiest child is a ginger cookie lover as well and he gave these 2 thumbs up.


Ginger Cookies

1/2 c mashed beans
1/4 c. molasses (grease cup before measuring, this lets the molasses slide right out)
3/8 c. olive oil
1 c. raw sugar
1 egg
2 1/4 c. wheat flour (or you can use 1 1/4 c. wheat flour and 1 c. white flour)
2 tsp baking soda
2 tsp ginger
2 tsp cinnamon
3/4 tsp ground cloves
Mix beans, sugar, oil, molasses and egg. Add all dry ingredients and mix. Roll into 1 1/2 inch balls.
Dip one side of dough ball in sugar. Place balls, sugar side up, on greased or parchment covered baking sheet. Flatten with fingers (cookies with beans do not flatten out in the oven).
Bake 9 min at 350. Remove immediately to baking rack to cool.
