Coconut Cups

These are divine and almost healthy for you, almost. They are definitely better for you than store bought coconut almond candy and far better as well.  One of our cute nieces, who is actually all grown up, loves these and lights up when she comes and I've made them. 



1/2 c coconut oil, softened or melted
1/8 c. raw honey
1 1/4 c unsweetened coconut
1 tsp real almond extract
1/4 c. super finely chopped almonds


Mix above together.  You can use candy papers or put them straight into the tiny muffin tins.  You will have to pop each one out with a knife after cooling if you put them right into the pan, but it's not too tough.  Pat them into the cups.

To top them you can use melted chocolate chips with a bit of coconut oil added, or I like to use this coconut fudge recipe, Coconut Fudge.

These beat almond joys any day, they're coconutier and much healthier for you.
