Chocolate Chocolate Chip Cookies

I can't believe this wasn't already here since it's been a favorite for awhile. I've spent years trying to find a cookie recipe that was worth eating. I really love this one, and so does my brother-in-law Mark. They are one of his favorites!!

Our nephew Tyler (age 7) said,"I love Aunt Mellonee's cookies.  I know they are healthy, but I love them anyway."  Pretty good review!


1/4 c. coconut oil (or you can use 1/4 c. butter if that's what you have)
1/2 c. mashed beans (you can use black beans mashed or refried beans with no seasonings or cook your own pintos and mash)
3/4 c. sugar (I like demerrera because it still has the molasses and is a little less processed)
2 eggs
1 1/2  c. wheat flour
1/2 c. baking cocoa
1 1/2 tsp baking soda
1/2 c. to 3/4 c. chocolate chips

Combine coconut oil, beans and Either, dip one side in sugar and place sugar side up on greased or parchment covered baking sheet. Or skip the sugar and roll them in unsweetened coconut, mmmmmm good.   Smash down with fingers to about 3/4 inch thick.  These do not spread much in the baking process.  Bake for 10 min at 350'.
These are still a cookie, but there is some added goodness and yet they taste completely decadent.


UPDATE:  I have started putting 1/2 cup cooked beans into the blender with 1/4 c. coconut oil and blending well before adding remaining ingredients.  Some days I have to add eggs as well to get it to mix but it makes an amazingly smooth textured cookie.
