Baked Oven Fried Chicken


Fried chicken hasn't ever been on the menu here. The closest I gave come is shake and bake long ago.  But then one if our children discovered KFC, and a taste for crispy chicken was born.  Baked in the oven so that I can cook lots of chicken while I make up some sides to go with it. It was crispy and flavorful and got a 2 thumbs up review from my pickiest eater.  


Oven Fried Chicken

1 tsp basil
1 tsp oregano
1 tsp sage
1 tsp marjoram
2 tsp salt
1 tsp pepper
2 Tbl paprika
1/2 tsp onion powder
1 tsp garlic powder
1/2 c. butter (or olive oil)

1 1/2 c. whole what flour
1 c. bread crumbs
12 skinless chicken thighs or breasts 

Preheat oven to 400'.

Cut foil slightly larger than baking sheet.  Crumple gently, just enough to make foil not smooth.  Unfold and  lay on backing sheet.  Put wire cooling racks on top of foil.
Combine seasonings, flour and crumbs. If using butter, melt butter in small sauce pan. Dip chicken into butter or oil, then seasoning mix. On baking racks on prepared pan. Place chicken on the rack, bake 400' for 1 hour.
This seasoning tastes like a cross between kfc and shake and bake. It gets slightly crisp and was a family favorite.
